Yuvarlakia with lemon sauce and courgettes is a dish bringing back childhood memories of mother’s or grandmother’s cooking.
It is usually a soup with or without the avgolemono sauce and in this case it is enriched with the sauteed courgettes/zucchinis.

This childhood temptation ideally goes with a spicy feta cheese and sourdough bread soaking the thick sauce.

A perfect winter dish, it is somewhat labour intensive and time consuming, until now…

Ingredients to serve 2

1 jar YIAM Yuvarlakia

4 medium size courgettes

50 gr olive oil

1 full clove of garlic

Juice of 1 lemon

 

Preparation.

 

Slice the courgettes medium thick.

Heat the oil and garlic in a wide pan and add the courgettes. When slightly golden, add the lemon juice, lower the heat, season, cover and let simmer for a few minutes in the available liquid until tender but still al dente.

When most of the liquid is gone, add the jar of YIAM yuvarlakia, turn off the heat and leave to rest.

Stir by swirling the entire pot and serve with freshly ground black pepper, a spicy feta cheese and fresh sourdough bread.

 

It will certainly awaken childhood memories of yiayia’s kitchen…
