500g cooked pasta of your choice
2 coarse grated carrots
2coarse grated courgettes (zucchini)
100gr finely cut parsley
½ jar yiam pesto with sun dried tomatoes
200gr grated cheese (sour hard myzethra or other)
Sautee the vegetables in olive oil for a few minutes.
Add a glass of water and the yiam pesto of sun dried tomatoes and let simmer briefly.
Mix in the cooked pasta, leave on heat until the sauce thickens, about couple of minutes.
Serve topped with the grated cheese and a sprinkling of parsley.
