This is bound to be one of the healthier meals you might want to try.
A quick and easy pasta dish with vegetables and sun-dried cherry tomato pesto.

The concentrated sweet and sour taste and flavour of the sun dried cherry tomatoes will add an umami taste.
The grated dry spicy mizithra Greek local cheese will also take it all to the next level.
These spaghetti with vegetables and pesto from sun-dried tomatoes will change your taste buds.

 

Ingredients  To serve four.

500 gr pasta, we suggest spaghetti or tagliatelle.

 

For the sauce :

1 coarse grated carrot
1 courgette, finely cut
1 yellow bell pepper, finely cut
1 cup cherry tomatoes
1 large glass full of a good Chardonnay
200 gr grated dry mizithra
1 cup parsley, finely cut
1/2 jar YIAM Sun-dried cherry tomato pesto with oregano.

 

Preparation.

 

Boil the pasta for 2mins less than suggested on the package.
Grate the carrot and cut a half of the cherry tomatoes in two.
In a large frying pan, sautee the vegetables in good olive oil.
Deglaze with the Chardonnay.
Let evaporate the alcohol and then add the cherry tomatoes.
Simmer until most of the liquid has evaporated and add the pasta.
Stir to mix well and let simmer for another couple of minutes.
Remove from the heat add some of the parsley and mizithra  and serve in a large  deep platter.
Dress with the remaining mizithra and chopped parsley.

We serve pasta with vegetables and sun-dried cherry tomato pesto in a big ceramic bowl.

 

Accompany with a good Chardonnay wine from Manolidis Winery
