Blueberry Preserve Bars
For 10 bars – Adapted for here
1 1/2 cup (180 g.) whole wheat flour
1/3 cup (40 g.) flaxseed meal
1 tsp. baking powder
2 tsp. honey
1 tsp. vanilla extract
1 tsp. melted butter
250 g. blueberry preserve
Preheat oven to 170 degrees Celsius.
In a bowl mix whole wheat flour with flaxsheed meal and baking powder.
In another small bowl combine honey with vanilla extract, egg and melted butter. Add the mixture to the bowl with the flour and knead into a soft dough.
Transfer the dough to a floured work surface and using a rolling pin roll into a rectangle. Using a small knife or pizza cutter divide into 10 equally sized pieces.
Spread on one side of each dough piece 1 teaspoon of blueberry preserve. Carefully fold one length of the dough over the filling, and then the other. Wet the edges with some water and gently pinch to seal.
Continue the process until you finish with all the bars.
Transfer to a baking sheet covered with parchement parer and bake for about 15-20 minutes, until golden brown.
Swirl some syrup from the blueberry preserve into yogurt and taste it with some milk or coffee.
